Spiced Pork Tenderloin on the Grill with Apricot Sauce

With the weather turning cooler, grilling outside in Florida can be even more pleasurable. Here’s a simple but delicious pork tenderloin recipe for you to try on your natural gas grill.

Spiced Pork Tenderloin on the Grill with Apricot Sauce
Serves 4

½ cup apricot preserves
2 tablespoons lemon juice
1 teaspoon finely chopped onion
1 ½ teaspoon chili powder
1 teaspoon brown sugar
½ teaspoon ground cumin
½ teaspoon ground cinnamon
½ teaspoon ground coriander
3/4 teaspoon salt
1/4 teaspoon black pepper
1-12 oz pork tenderloin 

Spray the grill rack with cooking spray. Prepare the grill for medium hot fire. 

Mix the next 7 ingredients in a small bowl. Rub the spice mix all over the pork tenderloin. Grill the pork 5 inches from the heat, turning as needed, until meat registers 155-160ºF in the center (about 20-25 minutes). 

While the pork tenderloin is grilling, bring the preserves, lemon juice and onion to a boil in a small saucepan and boil two minutes. Allow to cool.  

When the meat is done, warm the apricot sauce over low heat. Slice the pork tenderloin, drizzle with the sauce and serve.
