Here’s a quick and easy dish that features a spin on cauliflower. Find “riced” cauliflower in the fresh produce or freezer section of your grocery store.
Ingredients
- 3 tablespoons grape seed oil
- 4 cups cauliflower “rice”
- 3 cloves garlic, minced
- 1 medium sweet onion, diced
- 1 red chili, minced
- 1/2 lb cooked pork tenderloin, diced small
- 2 eggs
- 1 cup bean sprouts
- 2 tablespoons soy sauce
- 1/2 cup frozen peas
- 3 green onions, finely sliced
- 1/4 cup cilantro, chopped
Instructions
- Place oil in a wok over medium-high heat. Add cauliflower, garlic, onions and chili; stir-fry until fragrant, 30 seconds to 1 minute.
- Add meat and stir-fry until heated through. Using a wooden spoon or spatula, push ingredients aside; crack egg into middle of wok. Stir quickly to cook and break up.
- When egg is cooked, add bean sprouts and soy sauce. Stir fry, keeping heat medium-high. Add peas; stir-fry 2-3 minutes.
- Sprinkle with green onion and cilantro; serve piping hot from wok.
