Lobster Rolls

Lobster Rolls

Ingredients
  1. 1 cup mayonnaise
  2. ½ medium sweet onion, finely diced
  3. 2 stalks celery, finely diced
  4. ½ Tbsp. fresh tarragon, finely chopped
  5. 2 pounds cooked lobster meat, cut into 1/2-inch chunks
  6. Kosher salt & fresh ground black pepper
  7. 4 hot dog-style buns
  8. 4 tbsp. unsalted butter
Instructions
  1. In a large mixing bowl combine mayonnaise, onion, celery and tarragon and fold together thoroughly.
  2. Add lobster meat and continue to fold together until thoroughly combined.
  3. Season lobster salad with salt and pepper to taste. Reserve in refrigerator for 30 minutes.
  4. Heat a large sauté pan over medium-high heat. Add 2 tablespoons of butter. When butter is melted add opened buns. Toast until golden brown. Remove from pan and repeat with remaining buns.
  5. Place buns on plate and spoon lobster salad onto toasted part. Serve right away.
